Scrambled Eggs

Ingredients

  • large eggs
  • 1/8 cup milk
  • 1/8 teaspoon salt
  • 1/2 tablespoon unsalted butter

Instructions

  • In a medium bowl, whisk together the eggs, milk, and salt until slightly foamy. 
  • Melt the butter in a small frying pan over medium heat, coating the entire pan. 
  • Reduce heat to medium-low and add the eggs. 
  • Wait for the edges to just barely start to set, then using a rubber spatula, gently push the eggs from one end of the pan to the other. Continue this process, pausing in between swipes to allow the uncooked egg to settle on the warm pan and cook, gently pushing the liquid to form the curds. 
  • When the eggs still look wet but are mostly cooked, fold them into themselves a couple times.  
  • Remove from the heat and serve.
