Black Bean Brownies
Ingredients
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup semisweet chocolate chips
- 3 tablespoons canola oil
- 3 large eggs
- 2/3 cup packed brown sugar
- 1/2 cup baking cocoa
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
Directions
- Blend the black beans, 1/4 cup chocolate chips and oil in a food processor or blender.
- Add eggs, brown sugar, cocoa, vanilla, baking powder and salt; cover and blend until smooth.
- Pour batter into a well-greased or parchment lined 8x8in baking pan.
- Sprinkle remaining chocolate chips on top.
- Bake at 350° for 20-25 minutes.
