Black Bean Brownies

Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup semisweet chocolate chips
  • 3 tablespoons canola oil
  • 3 large eggs
  • 2/3 cup packed brown sugar
  • 1/2 cup baking cocoa
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt

Directions

  • Blend the black beans, 1/4 cup chocolate chips and oil in a food processor or blender.
  • Add eggs, brown sugar, cocoa, vanilla, baking powder and salt; cover and blend until smooth.
  • Pour batter into a well-greased or parchment lined 8x8in baking pan. 
  • Sprinkle remaining chocolate chips on top.
  • Bake at 350° for 20-25 minutes.
