Rice Pudding

Ingredients

  • 1 ½ cups cooked rice

  • 2 cups milk

  • ¼ teaspoon salt

  • ½ cup raisins

  • 1 egg

  •  cup white sugar

  • ½ teaspoon vanilla extract

Directions

  • Combined cooked rice, 1 1/2 cups milk, and salt in a medium saucepan.
  • Cook on medium heat and stir continuously until thick and creamy. 
  • Add remaining 1/2 cup milk, raisins, beaten egg, and white sugar.
  • Continue cooking 3 minutes on medium heat, stirring continuously, until well blended.
  • Remove saucepan from heat; stir vanilla extract.
